Quick Made 'Pav Bhaji'
A fast food recipe made from mixed vegetables and served with Burger rolls(Pav)…
Health Check – High in Protein, Carbohydrates, Fats, vitamins and calcium.
Ingredients
5-6 Burger rolls (Better known as Pav in India)
3-4 medium sized potatoes
2 small carrots
1 capsicum
1 onion (Finely chopped)
2 tomatoes (Finely chopped)
Garlic/Ginger paste
4-5 Green Beans
¼ portion of cauliflower
1 eggplant (Baingan) – optional
1 small bowl of green peas
2 finely chopped green chillies
Coriander leaves
Pinch of Turmeric powder
Cumin seeds
Pinch of red chilli powder
2 teaspoons of Pav Bhaji Masala
½ teaspoon garam masala
2 tablespoon oil
Salt to taste
Cooking Method
1. Cut all the vegetables and keep aside.
2. Take a pressure cooker and add 2 tablespoons of oil. Let it heat.
3. Add some cumin seeds. Once the cumin seeds start popping add the chopped onions, ginger and garlic paste. Fry these for 2-3 minutes.
4. Add chopped tomatoes to the fried onions and let it cook for another 2-3 minutes.
5. Add the pav bhaji masala to fried onions and tomatoes. Also add turmeric powder, garam masala, chilli powder and let it cook for another 2 minutes. (Add some water to make the gravy a little smooth)
6. Once the gravy looks cooked add all the chopped vegetables (listed above) and mix well. Add very little salt since the pav bhaji masala already has the salt included in it.
7. Add 2 tablespoons of water to the vegetable mixture and pressure cook for 5- 7 minutes (or 2 whistles)
8. Once the bhaji is cooked mash it properly (using a potatoe masher) making a thick vegetable curry. Your Bhaji is now ready.
9. Now roast the pav or burger rolls on a pan with some butter.
10. Serve the Roasted Pav with the Bhaji. Make sure you garnish the bhaji with the chopped coriander leaves and butter to bring that awesome flavour.
