Mom’s special ‘Khasta Kachori’
A delicious snack from the Indian state of Rajasthan made from plain flour, white lentils and various spices...
Health Check – White lentil (urad daal) is very nutritious and is recommended for diabetics, as are other pulses.
Ingredients
250 gms plain flour (makes 8-9 kachoris)
2 tablespoon vegetable oil
½ teaspoon baking powder
Salt to taste
Water to prepare dough
100 gms White lentils (Urad daal)
1 coriander powder
1 teaspoon red chilli
½ teaspoon garam masala (blend of ground spices common in Indian and other South Asian cuisines)
pinch of asafoetida
Cooking Method
1. Soak the white lentils overnight.
2. Rinse the lentils and drain.
3. Grind the lentils in a food processor to make a thick paste for stuffing (Do not add any water while grinding).
4. Add, salt, coriander powder, garam masala, red chilli powder and asafoetida to the paste.
5. Take a pan and add ½ tablespoon oil to it.
6. Stir fry the paste and cook for 3-4 minutes until it turns light brown.
7. To prepare the dough – Add the plain flour in a mixing bowl. Now add salt to taste. Also add the oil and baking powder. Then sift the flour, gradually adding enough water to make a smooth dough.
8. Divide the dough into 8-9 portions.
9. Take each portion and flatten and roll into 2 inch round.
10. Wrap one portion of stuffing in each round and roll into a smooth ball, using greased hands.
11. Now flatten each ball and roll into 3-4 inch round.
12. Heat oil in a deep pan to fry the kachoris.
13. Deep fry the kachoris on medium flame until golden brown.
14. Drain oil from Kachoris and serve hot with green chutney or tomato ketchup.
