Carrot and Red Lentil Soup

Ingredients
1 cup red lentil (2-3 servings)
2-3 medium sized carrots (peeled, washed and chopped)
1 chopped tomato
2 garlic cloves
1 teaspoon chopped ginger
Salt to taste
¼ teaspoon black pepper
½ teaspoon coriander powder
Few cumin seeds
1 tablespoon oil
Lemon juice according to taste
Coriander leaves
2 cups water
Cooking Method
1. Wash and soak the red lentil for 15 minutes prior to cooking.
2. In a deep cooking pan/pressure cooker add the oil. Once the oil gets heated add cumin seeds, chopped garlic and ginger and stir fry for about a minute.
3. Now add the chopped tomato and carrots and stir fry them for another minute.
4. Now add salt and coriander powder and put the lentils and vegetables to boil for 10 minutes in the pressure cooker. (If cooking in any other vessel boil for 15-20 minutes)
6. Once the lentils and vegetables are cooked nicely, blend it in a mixer or using a hand blender.
7. Cook the blended lentils and vegetables for another 2-3 minutes.
8. Add some lemon juice to the soup.
9. Garnish the soup with black pepper and chopped coriander.
10. Your delicious Carrot and Red Lentil Soup is now ready to be served.
